Chicken Zoodle Soup
Low Carb Chicken Zoodle Soup - Swap out the noodles with healthy, full-of-vitamins zoodles (zucchini noodles).

  1. 6 C of chicken stock or broth
  2. 2 C onion, sliced in thin half rounds
  3. 10 baby carrots, sliced into 1/2" pieces
  4. 1 purple top turnip, chopped into small cubes
  5. 2 cloves minced garlic
  6. salt & pepper
  7. 2 chicken breasts, cooked and shredded (aim for 3-4 oz servings)
  8. 4 medium zucchini, halved lengthwise
  9. 2 T finely chopped parsley
  1. Heat chicken stock over medium heat with carrots, turnip, onions and garlic, for approximately 30 minutes until vegetables are fork tender.
  2. Season broth with salt, pepper and parsley.
  3. Run the zucchini halves through the spiralizer to make zoodles. cut zoodles into thirds, so not too long.
  4. Add chicken and zucchini to broth and heat through.
  1. Substitute shrimp, clams, sausage or beef for alternate protein. Also, you may add any other vegetables of choice!
