Whole Roasted Cauliflower

  1. 1 large cauliflower
  2. Olive oil, salt & pepper
  1. 1/3 C toasted almond slivers
  2. 2 T butter room temp
  3. 2 garlic cloves, peeled
  4. 1/2 C olive oil, plus extra for basting
  5. 2 t wine vinegar
  6. 1/2 C chopped parsley or other herb
  7. 1/2-1 t red pepper, salt & pepper
  1. Heat oven to 375'. Break off and discard outer leaves and hard core of bottom of cauliflower, careful of florets.
  2. Rinse cauliflower, drizzle and rub with olive oil. Sprinkle salt & pepper.
  3. Place on baking sheet core down, cook 1 hour, basting 2-3 times with more olive oil.
  4. Mix sauce ingredients and spoon over cut wedges of cauliflower.
  1. Roasting whole vidalia onions or garlic is fantastic also!
