Low Carb Chicken Zoodle Soup – Swap out the noodles with healthy, full-of-vitamins zoodles (zucchini noodles).
Ingredients
- 6 C of chicken stock or broth
- 2 C onion, sliced in thin half rounds
- 10 baby carrots, sliced into 1/2″ pieces
- 1 purple top turnip, chopped into small cubes
- 2 cloves minced garlic
- salt & pepper
- 2 chicken breasts, cooked and shredded (aim for 3-4 oz servings)
- 4 medium zucchini, halved lengthwise
- 2 T finely chopped parsley
Instructions
- Heat chicken stock over medium heat with carrots, turnip, onions and garlic, for approximately 30 minutes until vegetables are fork tender.
- Season broth with salt, pepper and parsley.
- Run the zucchini halves through the spiralizer to make zoodles. cut zoodles into thirds, so not too long.
- Add chicken and zucchini to broth and heat through.
Notes
Substitute shrimp, clams, sausage or beef for alternate protein. Also, you may add any other vegetables of choice!
