This Spiced Roasted Salmon is an interesting twist on the basic fish dish. Spicy and warmed by the addition of cinnamon, the flavor is unique and exotic.
Ingredients
- 1 salmon piece, 3 lbs
- 1 T ground cumin
- 1 T ground coriander
- 1 T chili powder
- 1 t kosher salt
- 1 t ground cinnamon
- 1 t cayenne pepper
- 1 t ground black pepper
- Garnish: 1 lemon cut into 12 wedges; fresh cilantro and parsley
Instructions
- Preheat oven to 400′ F. Place salmon skin-down on cookie sheet lined with foil
- Combine rub ingredients in small bowl and spread on fresh side of salmon
- Roast the salmon for 18-20 minutes or until cooked through, firm to the touch
- Turn oven to broil, and broil an additional 3-5 minutes, until slightly golden
- Place on platter and top with cilantro sprigs and lemon wedges
